Honey Popcorn

My mom would often make this yummy popcorn for us for family night. We'd beg for it every time because it was our favorite treat! My kids also love it.
I've made it for many a girl's night and they've always loved it. :D It's good (much better than caramel corn, I think) and super easy! Serves

Honey Popcorn
1 1/2 c popcorn kernels
1 c sugar
1/2 c honey
1/2 c butter

1. Pop kernels in air popper--or over med-high heat in large pot--and place in large bowl. (You could also pop use two large bags of light microwave popcorn.) Make sure no unpopped kernels get inside of bowl.
2. Place sugar, honey and butter in medium saucepan. Stir constantly over medium heat. It will eventually begin to boil...boil to hard ball stage on candy thermometer (260 degrees) or for about 5-6 minutes.
3. Pour over popcorn and stir until popcorn is well coated (AVOID getting on your skin! It sticks and is very, very hot!). Form into balls or any other shape you want (flatten a bit and use large cookie cutters to make shapes if you'd like). But if you leave it in the bowl it's harder to grab because it becomes very hard when cooled. Serve warm (which is my favorite) or cool. ENJOY the yumminess!
