I was skeptical about this salad. I am not a vegetable person, but these mixed well together. (The photo is pre-dressing and cheese). A lettuce-less salad. It is super healthy and delicious. Tastes a lot like taco salad, but with a bigger variety of ingredients. If you hate one of the ingredients, leave it out or replace it with something similar. Add anything else you want (olives, lettuce, etc.) Serves 4-6 as a main dish. Give it a try!
Estrella Salad
1 large tomato, chopped
1 red bell pepper, chopped
1 medium cucumber, chopped
1 can black beans, well drained
1 can corn, well drained
1 avocado, diced
1 1/2 c shredded cheese
1 1/2 c Fritos corn chips
1/4 c (or less) Catalina or Zesty Catalina salad dressing
Stir everything together in a medium bowl. Add avocado, cheese, corn chips and dressing only right before serving.
This is pretty close to what we call Taco Salad. We use Catalina, lettuce, kidney beans, cucumber, olives, tomato, cheese, avacados, hamburger(w/ taco seasoing) and Cheese Doritos. I eat WAY too much! One of my favs!
