taco salad, but with a bigger variety of ingredients. If you hate one of the ingredients, leave it out or replace it with something similar. Add anything else you want (olives, lettuce, etc.) Serves 4-6 as a main dish. Give it a try!
1 large tomato, chopped
1 red bell pepper, chopped
1 medium cucumber, chopped
1 can black beans, well drained
1 can corn, well drained
1 avocado, diced
1 1/2 c shredded cheese
1 1/2 c Fritos corn chips
1/4 c (or less) Catalina or Zesty Catalina salad dressing
Stir everything together in a medium bowl. Add avocado, cheese, corn chips and dressing only right before serving.
