Bread Sticks


I LOVE homemade bread. Dinner rolls are such a treat! BUT most of the time I don't think far enough ahead of time to make them. SO when that happens I make these bread sticks. They're soooooo good!
They're almost..pretty much...just as good and take so much less time! I got this recipe from the Food Nanny, of course! They're the best ones I've ever had. My kids LOVE them. Seriously, they go crazy over them. You can also divide dough into 8 equal balls and flatten to make DELICIOUS buns.

Bread Sticks

1 Tbsp active dry yeast
1 c warm water (105-115 degrees)
2 Tbsp olive oil
1 Tbsp honey
1/4 tsp salt
3 to 4 cups all-purpose flour (or half all-purpose and half wheat flour)
1/2 c butter, melted
1/4 to 1/2 tsp garlic salt or garlic powder

1. Mix the yeast and water in a small bowl, cover, then let stand until foamy, 5 to 10 minutes.
2. Mix the oil, honey, salt, and yeast mixture in a large mixing bowl. If using a food processor, add 1 cup of flour at a time, up to 3 cups, mixing well after each addition. Or mix in all 3 cups by hand with a wooden spoon.
If the dough seems too wet, mix in more flour, 1/4 cup at a time, until the dough is soft up to one more cup. Turn the dough on a floured surface and knead in more flour, 1/4 cup at a time, until the dough is moderately soft and somewhat firm to the touch, about 6 minutes.
3. Lightly grease a sheet pan.
4. Pinch off balls of dough to equal about 2 Tbsp and roll between your hands to form small breadsticks. (FOR BUNS, divide dough into 8 equal balls and flatten with hand.) Lay them on the prepared pan.
5. Mix the butter and garlic in a small bowl. Brush onto the breadsticks or buns, reserving some for later. Let dough rise until doubled in bulk, 15 to 20 minutes. Meanwhile, preheat the oven to 425.
6. After the breadsticks or rolls have risen, bake about 10 minutes or until they are golden brown. Brush on additional garlic butter halfway through baking and again after the breadsticks or rolls come out of the oven. Serve warm.

Variation: For Parmesan breadsticks, brush with melted butter, sprinkle lightly with garlic salt and heavily with grated Parmesan cheese.
