My dear friend, Emily, made these for a book group one day and I about died...of overdose because I couldn't stop eating them! :D They have the perfect texture and they taste divine. These weren't decorated yet, but you can make them as pretty as you'd like by drizzling different colored chocolate on top. My husband asked for these for his birthday one year instead of a cake. :)
You can also make these with Nutter Butter cookies,
Oreos, or half Oreos and half Nutter Butters. :D
Cookie Truffles
8 oz cream cheese
1/2 tsp. vanilla
1 (1 lb. 2 oz.) package of Oreos or Nutter Butters
1 lb. milk chocolates (for melting), or chocolate type of your choice
1/2 lb. white melting chocolates
1. Line large cookie sheet with parchment paper or aluminum foil.
2. Blend cookies in blender until fine, a few at a time. Add cookie crumbs to medium bowl. Mix in cream cheese and vanilla with your hands.
3. Roll cookie mixture into small balls (size according to your preference) and place on cookie sheet; place in freezer 20-30 min. Meanwhile, melt chocolates in small bowls.
4. Using a toothpick, dip each cookie ball in melted milk chocolate (or chocolate of your choice). If balls start to fall apart, let sit in freezer 5-10 minutes, then dip the rest. Set dipped chocolates back in freezer until chocolate coating is relatively firm.
5. Drizzle melted white chocolate on the top (for decoration--make sure to cover up the toothpick holes). Place them back in the freezer or fridge until they are ready to be served.
