This recipe came from Tristi Pinkston. She wanted me to test some recipes for a book she has coming out and YUM! So delicious. They're best eaten within 24 hours (if you have a hard time with that, give me a call I'm sure I can help) but are always delicious. mmmmmm...Makes about 3 dozen, give or take.
Snickerdoodles
Ingredients
3 Tbsp sugar
3 tsp ground cinnamon
1/2 c butter, softened
1/2 c shortening
1 1/2 c sugar
2 eggs
2 t vanilla
2 3/4 c flour
2 t cream of tartar
1 t baking soda
1/4 t salt
1. Preheat oven to 400 degrees. In a small bowl, mix 3 Tbsp sugar and ground cinnamon. Set aside.
2. In a large bowl cream together butter, shortening, sugar, eggs and vanilla with beaters. Blend in the flour, cream of tartar, baking soda and salt.
3. Shape dough into 1-inch balls. Roll each ball in cinnamon-sugar mixture and place 2 inches apart on ungreased cookie sheet. Bake 8 to 10 minutes, careful not to overcook. Remove from cookie sheet to cooling rack immediately.
